Details

Raw honey is harvested and jarred without heating or filtration, preserving natural traces of pollen, propolis, and beeswax. This process offers a tasting experience that captures the honeycomb’s unique flavor in its entirety. While freshly harvested honey begins in a liquid state, it naturally crystallizes evenly within a few weeks; it is best consumed in this crystallized state to avoid alteration of its delicate properties.

  • Taste Profile: Fresh and mentholated with distinct notes of fresh herbs.
  • Color: Characteristic yellowish-green.
  • Dominant Flowers: Linden (Basswood).
  • Secondary Flowers: White clover, brassicas, and raspberry.
  • Harvest Period: Late July.
  • Organic Status: Non-certified organic honey (beginning with the Summer 2024 harvest).
  • Conservation: Raw honey lasts indefinitely, though consumption within two years of harvest is recommended. Store in a cool place below 25°C to prevent the degradation of natural sugars.

This honey transports the palate to the heart of the hive, offering a complex herbal profile that is both refreshing and deeply aromatic.
