Este vinagre se produce en la región del Priorato, al sur de Cataluña, utilizando exclusivamente uvas tintas de la variedad Garnacha. Se envejece en barricas de roble durante más de 20 años. El vinagre se extrae de las barricas en pequeñas cantidades, con intervalos de no menos de un año.
Es un producto completamente natural y sin aditivos.


El vinagre tiene un color rosado cobrizo con matices anaranjados y es ligeramente opaco. Tiene un aroma intenso y potente que refleja su madurez. Intenso y ligeramente ácido.
