The climate of the Tavoliere, with its high temperatures, is ideal for the preparation of this speciality. In summer, a long snake of green nets is filled with tomatoes spread out in the sun. The long tomato, after being split in two and sprinkled with salt, is placed on the net and left in the sun until completely dry. Preserved in Coratina extra virgin olive oil, it maintains a more leathery consistency and a very high quantity of lycopenes.
